Our planter is still in its infancy, but the local store gave us a hand with this fabulous summer squash and zucchini saute.

Sauteed Zucchini & Yellow Squash:

3 teaspoons olive oil

1 clove garlic, minced

1/2 small onion, cut in thin slices

1 organic zucchini, cut into 1/2-inch slices

1 organic yellow squash, cut into 1/2-inch slices

1/8 teaspoon crushed red pepper

Sea salt and fresh ground pepper

Heat olive oil over medium-low heat in large skillet. Saute onion and garlic just until softened - about two minutes.

Fire-up the heat to medium-high, add zucchini, squash and crushed red pepper. Continue sauteing until vegetables are golden and tender crisp - about five minutes. Remove from heat and toss with salt and pepper. Serve!
