Bell Pepper Salad

This recipe comes to you thanks to a certain someone's love of fresh vegetables. Yes, we got lucky on that one. It was a treat to watch her mind work up this recipe, thinking hard on what might work well together. I did have to reign her in a bit (no brown sugar, please...), but this is essentially all "Little STRUCTUREbags."

Bell Pepper Salad

1 Orange Bell Pepper, sliced into matchsticks
1 Yellow Bell Pepper, sliced into matchsticks
1 Green Bell Pepper, sliced into matchsticks
1 Carrot cleaned, pealed then peeled into salad
3 radishes, sliced thin
3/4 cup cherry tomatoes, sliced in half

Dressing:

1/4 cup olive oil
1 t balsamic vinegar
Juice from one lemon
1 t lemon zest
handful of parsley, leaves only, torn gently
salt and pepper to taste

 

 

Prepare vegetables as directed and place in salad bowl. Whisk together dressing adding the salt and pepper gradually, adjusting to taste. Toss with vegetables and enjoy! Remember, thanks to the wide selections now available at your local grocer, you can grab as many or as few organic items as you like. Do what's best for your family.
